
Ingredients:
- 5 bananas
- 1 packed of blueberries
- 2 tablespoons of Honey
- 2 large eggs
- 95 ml vegetable oil or 125g of unsalted butter
- 2 tablespoons of apple juice
- 250g of self raising flour
- 1 tablespoon of cinnamon
Instructions:
- Pre-heat over to 180 degrees
- Grease the bottom and sides of a loaf tin with butter
- Put four bananas in a large bowl and use a potato masher to mash them up. It doesn't matter if it is lumpy, it makes it better in the end when you have pieces of banana in the bread.
- Use a wooden spoon to beat the butter soft or just pour in the oil (I prefer to use vegetable oil as it is better to hold the mixture together and gives the banana bread a heavier feel)
- Crack in the eggs and beat them with the butter / oil and bananas.
- Stir in the honey and apple juice.
- Tip one packet of blueberries into the mixture and stir them in. Don't worry about crushing them at all, it is better for them to be broken.
- Pour the mixture into the loaf tin and slice up the remaining banana, covering the top of the loaf with the slices.
- Drizzle honey over the surface of the loaf.
- Bake for an hour. After an hour, put a knife into the centre of the loaf and if it comes out clean it is finished. Otherwise, bake it for another five minutes, checking again that it is cooked through, repeating if not.
